Snowball Cake
2 small Knox Gelatin
1 c boiling water
1 c sugar
1 t lemon juice
4 T cold water
1 20-oz can crushed pineapple
1 lg angelsfood cake
2 8-oz cool whip
Soften gelatin in 4 T cold water. Add boiling water and stir until dissolved. Add sugar, lemon juice and undrained pineapple. Fold in 1 cool whip. Cut cake into small squares. Add to mixture. Mix lightly. Pour into9x13 pan. Top with other cool whip. Sprinkle with coconut. Refrigerate. Good Frozen (will keep several weeks-cover with foil to freeze.)
