Guiltless Chocolate Muffins
just a bar

1 1/4 c flour
1/2 c. oat bran
1/3 c. sugar
1/4 c. unsweetened cocoa powder
2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1 c. buttermilk
1/4 c. safflower oil (I've used corn oil with out much difference)
1/2 c unsweetened applesauce
1 whole egg
2 egg whites
1 tsp vanilla

Preheat the oven to 375 degrees. In a large bowl combine the flour, oat bran, sugar, cocoa, baking powder, baking soda and salt. In a medium bowl, place the buttermilk, oil, applesauce, whole egg, egg whites and vanilla. Whisk until well blended. Add all at once to the dry ingredients. Stir only until moistened. The batter should be slightly lumpy. Spoon the batter evenly into the prepared pan. Bake 20 - 25 minutes or until the muffins are cool and springy to the touch. Remove from pan and cool.
