Mashed Sweet Potatoes with Ginger and Orange
4 pounds sweet potatoes, peeled and cut into
1-inch pieces
2 teaspoons salt, divided
2 teaspoons grated orange peel
1/4
cup fresh orange juice
2 tablespoons firmly packed brown sugar
3 tablespoons butter or margarine, cut up
2 teaspoons grated fresh ginger
1. Combine potatoes, 1 teaspoon salt and water
to cover by one inch in large Dutch oven. Bring to boil; reduce
heat and simmer until potatoes are tender, 6 to 7 minutes.
2. Drain potatoes and mash in large bowl. Stir in orange peel,
juice and brown sugar until sugar dissolves. Add butter, ginger
and remaining 1 teaspoon salt until well blended.
(Can be made ahead. Transfer to 2-quart microwave proof dish; cover with plastic wrap and refrigerate up to 2 days. To reheat, turn back one corner of wrap to vent and microwave on High 20 minutes, stirring every 5 minutes until heated through.).
