Beet Greens Ravioli


Ingredients for 6 persons :

- 600 gr. of beet green

- 500 gr. of ricotta

- 150 gr. of grated Parmesan cheese

- 1/2 kg of flour

- 6 eggs


Preparation :

Wash the beet greens and boil in salted water. Drain and chop finely.

Stir ricotta, grated parmesan cheese, 2 eggs, a pinch of nutmeg and salt.

Mix all well to obtain a smooth paste.

Prepare the pasta dough with flour and 4 eggs, rolling it out into a thin sheet.

Put the mixture by the spoon onto half of the sheet.

Cover with the other half sheet and use a pie jagger to cut.

Press with fingers around the edges and then put the ravioli in hot salted water.

After some minutes drain and serve with melted butter and grated parmesan cheese.
