Potato Lefse

Definition: Lefse (lef-suh) is a soft, flat, unleavened bread made with potato, flour, milk, salt, and shortening.  The dough is rolled thin and baked on a hot, dry griddle.

Potato Lefse

Ingredients:
10 cups riced potatoes - salted
1/3 c. lard
1/8 c. milk
1 1/2 c. flour

Flour to make dough so you can handle it.

Mix all ingredients well.
Grab a baseball sized handfull. Roll on flat board with lefse roller until thin.
Use lefse turner to put on hot stove. Bake on hot stove til done on first side.
Turn over with lefse turner. Do second side til done.

Take off stove with lefse turner and cool.

Enjoy plain or with butter.
If you like add sugar, jam, meat, cheese or anything else you might like.
If you are serving lutefisk, you must have lefse.


Traditional Scandanavian Serving.

Spread with butter (smear).
Serve instead of bread or rolls with lutefisk, meatballs and other main meals.
For the sweet tooth, spinkle on a lttle sugar, or cinnamon sugar and roll-up.
Snack at coffee time add a slice of cheese and a piece of ham (any thin sliced meat).

USA American: Lay LEFSE sheet flat, roll LEFSE around wiener.  Microwave 45 seconds.

Austrian: Lay LEFSE sheet flat, roll LEFSE around vienna sausage.  Microwave 45 seconds.

German: Lay LEFSE sheet flat, roll LEFSE around bratwurst.  Microwave 45 seconds.

Italian: Lay LEFSE sheet flat, spread it with pizza sauce, pepperoni & cheese.  Mic 45 secs.

Mexican: Lay LEFSE sheet flat, spread it with refried beans and roll up.  Microwave 45 secs.

Polish: Lay LEFSE sheet flat, roll LEFSE around polish sausage.  Microwave 45 seconds.


Lefse Cream-Cheese and Meat Roll-ups

Lay lefse sheet flat, spread with a softened cream-cheese, (Brie, neufchatel, flavored spreadable cheese), layer with thinly sliced meat, (smoked salmon, pastrami, dried beef, smoked turkey breast, etc.). Roll up, serve as sandwich or skewer with toothpicks and cut into hors d'oeuvre size pieces.  These are wonderfully tasty and make a colorful addition to a party or snack tray.  Try adding a pickle slice, chopped olives in the center.


Lefse Cream-Cheese and Veggie Snacks

FINELY chop or grate broccoli, cauliflower, onion, carrot, garlic clove.
MIX veggies with Philadelphia style cream cheese that has been thinned with milk.
SPREAD veggie-cream cheese mix on LEFSE sheet.
ROLL LEFSE & skewer with 5 or 6 toothpicks.
CUT into Hors D'oeuvre size pieces.
