Orange Cinnamon and Almond Biscotti

1. Preheatoven to 325 deg. Butter a cookie sheet.

2. Cream butter with sugar.

3. Beat in eggs, orange rind and vanilla.

4. Mix together flour, baking powder, cinnamon and salt.

5. Add to butter mixture and combine.

6. Add the almonds and mix.

7. Divide dough in half. With lightly floured hand shape eack half into a 3 inch wide by 3/4 inch high log. Put on the cookie sheet.

8. Bake about 35 minutes.

9. Let cool about 10 minutes. Leave the oven on.

10. Cut the logs into 1/2 inch wide slices.

11. Arange slices cut side down on the cookie sheet.

12. Bake 12 minutes.

13. Turn them over and bake another 12 minutes.

14. Transfer to a rack and cool compleatly. Store in an airtight container.

To quickly toast almond stick them in the microwave for 4-6 minutes stir ever minute and watch them carefully. They go from toasted to burnt in seconds.
