Minestrone alla Casalinga [Veneto] :
(Housewife's Minestrone)
What you need (4 servings)
100 g (4 oz),dried white beans, 3 tablespoons oil, 2 onions, 2 garlic cloves,2-3 slices bacon.
4 tomatoes, 2 carrots, 2 potatoes, 1 small turnip, 2 sticks cellery, 250 g (½ lb) cabbage.
1 teaspoon chopped fresh thyme,1.75 litre (2 ½ pints) water.
50g (2 oz) small macaroni, salt, fresh ground black pepper.
How to do it :
Soak the beans overnight.
Peel and dice the potatoes carrot ans turnip; Wash and chop the tomatoes, cellery and cabbage.
Chop the onions and the bacon fine.
Heat the oil in a large pan.
Fry the onions and bacon for 3 minutes.
Add the tomatoes, beans, water, marjoran, and thime.
Bring to the boil, cover and simmer for 2 hours.
Add the carrots, let boil for 10 minutes.
Add the potatoes and turnip, let boil another 5-6 minutes.
Boil until the pasta and vegetables are soft.
Season with salt and pepper to taste.
Serve with grated Parmesan cheese.
