Zuppa di Ciliege :
(Black Cherry Soup)
What you need (4 servings) :
100 g (4 oz) sugar, 1 thin strip of orange peel, a little grounded cinamon.
150 ml (5 1/4 fl oz) Barolo wine, 500 (1 lb) big black seeded cherries.
1 tablespoon red wine jelly, 4 thin slices of bread without crust, butter.
How to do it :
Add the sugar, orange peel, cinamon, red wine jelly and wine in a pot.
Warm carefully until the sugar melts, boil for 1 minute.
Add the cherries and simmer for 10 - 15 minutes.
Melt the butter in a pan and brown the bread on both sides, let them drain on kitchen towel.
Take the cherries out the pot with a perforated laddle and devide them over the bread slices.
Reduce the cooking liquid by boiling and pour over the cherries.
Serve imediately.
