Fiori di Zucchini Fritti [All Regions] :
(Fried Zucchini Flowers)
What you need (4 servings) :
500 g (1 lb) courgette/zucchini blossoms, 2 tablepoons olive oil.
75g (3 0z) flour, salt, 1 egg wjite,stifly beaten.
Oil for frying, 2 lemions, cut into wenches.
How to do it :
Remove the stems and pistils from the flowers and wash them.
Gently press them in a cloth to dry them.
Make a lightly batter. Mix the oil into the flour and beat in enough water - about 175 ml (6 fl oz) - to obtain a smooth creamy consistency.
Add a little salt and let the batter rest for an hour.
When you are ready to cook, fold in the stiffly beaten egg white.
Dip each flower in the batter and fry for about a minute untill the fritters are crisp and golden, turning them over once.
Be carefull not to burn them to much.
Lift the flowers out with a slotted spoon and drain on kitchen paper.
Serve accompanied by lemon wedges.
