Insalata Frutti di Mare [Friuli] :
(Sea Fruit Sallad)
What you need (12 servings) :
2kg (4 lb) mussles, 1 kg (2 lb) clams
1 small octopus, weighing about 500g (1 lb), 3 small squids, weighing about 500 g (1 lb)
For the dressing :
175 ml (6 fl ox) olive oil, Juice of 3 lemons, salt and pepper, large bunch of parsley, fine shopped
How to do it :
Prepare and cook the
mussels and clams
Prepare the
octopus
and the
squid
.
Cook the octopus and squid in salt water - the octopus will take about 1 hour, the squid about 10 minutes.
Shell the mussels and clams.
Cut the octopus into samll pieces and the squid into rings and pieces.
Boil the prawns until they turn red, then shell them.
Combine the seafood in a large bowl.
Beat the dressing ingredients - their should be at least twice as much oil as lemon juice.
Pour over the dressing over the seafood and mix gently.
Marinate for at least an hour before serving.
Sprinkle with chopped parsley.
