Gnocchi di Susine [Friuli] :
(Gnocchi with Plums)
What you need (4 servings) :
800 g (1 ½ lbs) potatoes, 1 egg.
Little plain flour, little semlina, 1 tablespoon butter, salt.
Small plums, bread crumbs,grounded cynamon.
How to do it :
Peel, boil and mash the potatoes.
Let cool down a bit.
Add the egg, 1 tablespoon butter and a little salt.
Stir all together.Add the flour and semolina and work it all together until you get a smooth dough.
Make a roll of the dough about 8 cm (3 inch) diameter.
Cut the roll in ca 1 cm (1/4 inch) thick slices.
Remove the pips of the plums
Fry the bread in a little butter with sugar and grounded cynamon.
Stuff the the plums with the crumbs.
Lay the plums on the dough slices, fold them together and make balls of them.
Bring water to boil in a pot.
Lay the balls in the boiling water (a spoon full at the time).
Take them out with a skimmer when they come up to the water surface.
Lay the gnocchi in a oven dish.
Cover them with melted butter and sweeted bread crumbs.
Set in a warm oven for 3-4 minutes and serve imediately.
