Inpepato di Cozze [Friuli] :
(Mussels with Pepper)
What you need (4 servings) :
1,5 kg (3 lb) live mussels, freshly ground black pepper
2 big lemons.
How to do it :
Clean and cook the mussels.
Discard the mussels that didn't open!!.
Take the mussels out of the water with a perforated laddle and lay them on a big serving dish.
Sieve the cooking-liquor trough a muslin and poor over the mussels.
Season generously with pepper.
Serve the mussels with crisp bread and lemon halves.
Use the shell of the mussels to spoon cooking-liquor and to press lemom juice on the mussels.
