Crema di Mascarpone :
(Mascarpone Creme)
What you need (4 servings) :
250 g (½ lb) mascarpone cheese, 2 eggs 50 g (2 oz) icing sugar.
2 tablespoons orange-liquer, cognac or rum, 250 (½ lb) starwberries to garnish.
How to do it :
Press the Mascarpone trough a sieve in a bowl.
Devide the yolk from the egg white.
Whisk the yolk under the cheese together with the sugar.
Add the liquer.
Whisk untill the mixture is light.
Whisk the egg whites until hard.
Mix the white carefully, but toueoughly under the egg-cheese creme.
Serve in portion-bowls, garnish with strawberries.
