Minestra di Orzo e Fagioli [Friuli] :
(Soup with Beans and Malt)
What you need (4 servings) :
100 g (4 oz) malt grain, 300 g (12 oz) potatoes, 50 g (2 oz) air dried ham.
50 g (2 oz) leeks, 2 table spoons butter, salt, 1 tablespoon chopped parsley.
1 tablespoon tomato paste, 3bayleaves, 100 g (4 oz) dried brown beans.
How to do it :
Soak the beans in water over night.
Boil the beans, bayleaves and ham for 1 ½ hour.
Add the malt grains after 45 minutes
Boil the leeks and potatoes in a separate pan.
Blend the potatoes and leeks in a blender.
Strain the cook liquid and add everything to the beans.
Add tonmato paste, butter, parsley, and salt to taste.
Let boil another 5 minutes.
Serve warm.
