Pepperoni rosso con acciuge e mozzarella [Piemonte] :
(Red Peppers with ansjovy and mozzarella)
What you need (4 servings) :
4 red peppers.
8 anchovy fillets, 8 slices mozzarella cheese.
How to do it :
Cut the pepper in halves and take out the seeds.
Lay an anchovy fillet on each half.
Cover with a slice of mozzarella.
Sprinkle with a little olive oil.
Warm in the oven by 200 C / 400 F until the cheese melts.
Serve warm.
