Insalata di Riso con Frutto di Mare [Veneto] :
(Rice Sallad with Sea Fruit)
What you need (4 servings) :
225 g (9 oz) Italian Rice, 5 tablespoons olive oil, 1 tablespoon lemonjuice:
1 tablespoon vinager, salt, freshly ground black pepper.
1 onion, 1 fennel, 2 tablespoons chopped parsley.
2,5 litres (2 gts) fresh mussels, 500 g (1 lb) peeled shrimps.
How to do it :
Bring the water to the boil in a big pot.
Add the rice, and let boil untill soft.
Drain the rice and poor over in a bowl.
Chop the onion roughly.
Chop the fennel to fine strips.
Ad the onion,oil, lemon juice and vinager to the rice.
Season with salt and pepper to taste.
Let get cold.
Add the fennel and parsley.
Clean and cook the mussels
.
Take the cooked mussels out their shell when they are cold (save 5 - 6 in their shell)
Add the mussels to the rice together with the shrimps.
Decorate the rice with parts of boiled eggs, black olives, a couple unpealed shrimps, the mussels in their shell and a fennel twig.
