Filletti di Sogliole [Friuli] :
(Baby Sole Filets with Pime Kernels)
What you need (4 servings) :
2 large onions, 2 tablespoons lemon juice, 2 tablespoons dry white wine.
2 teaspoons caster sugar, salt, freshly ground black pepper, 50 g (2 oz) raisins, 50 g (2 oz) pine kernels.
750 g (1½ lb) baby sole fillets, plain flour, olive oil.
How to do it :
Heat 8 teaspoons olive oil in a large shallow pan.
Peel and slice the onions thinly, cook them gently in the oil until they are soft.
Add the lemonjuice, white wine, sugar, and salt and pepper to taste.
Bring to the boil and simmer for 2 minutes.
Add the raisins and pine kernels.
Dust the sole fillets lighly with flour.
Shallow fry the fish in olive oil fot 1 minute on each side.
Arrange the fish on a serving dish.
Spoon over the onion mixture.
Serve hot with
