(Spinach Dumlpings)
What you need (4 servings) :
250 g (˝ lb) fresh bread crumbs,500 g (1 lb) chopped spinach
2 eggs, 1dl (˝cup) milk, 5o g (2 oz) grated Parmesan cheese
4 table spoons plain flour, salt, freshly ground pepper pepper.
how to do it :
Soak the crumbs in the milk.
Add the spinach, cheese, eggs, salt and pepper to taste.
Mix carefully untill you get a smooth dough.
Bring water to boil in a pot.
Make dumplings out of the dough.
Lay a few dumplings in the water to see if they keep together (if not add a little flour on the dough).
Lay the dumplings (a spoonfull at the time) in the water.Take them out with a laddle when they come up to the water surface.
Serve them in a warm bowl with melted butter and grated Parmesan cheese.
