Spaghetti alle Vongole [Friuli] :
(Spaghetti with Clams)
What you need (4 servings) :
! kg (2 lb) clams, 400 g (14 oz) spaghetti.
3 garlic cloves, 2 tablespoons olive oil.
250 g (8 oz) ripe tomatoes.
Salt and pepper, Small bunch parsley, finely chopped.
How to do it :
Clean and cook the clams
Remove the cooked clams from their shells and reserve.
Strain and boil the cooking liquor until reduced by half.
Peel and chop the tomatoes, chop the garlic finely.
Fry the garlic in the oil and, when the aroma rises, add the tomatoes, salt and pepper., and the reduced cooking liquor.
Add the parsley and cook for a few minutes or until the tomatoes soften.
Add the resreved clams and immediately take the from the heat.
Cook the the spaghetti al dente
Drain the spaghetti and add to the sauce
Stir briefly over a high heat and serve immediatley.
