Pistacho Pecan Cookies                                    

1/2 c. powdered sugar
1/2 c. margarine
1/2 c. vegetable oil
1 t. almond extract
1 to 3  drops green food coloring
2 eggs
1 - 3oz pkg instant pistacho pudding
2 c. flour
1/2 t. baking soda
1/2 t. cream of tartar
1/8 t. salt
1/2 c. chopped pecans
sugar

Combine powdered sugar, margarine,oil, almond extract, food coloring, eggs and pudding.  Mix well.
Add flour, baking soda, cream of tartar, and salt.  Mix well.
Stir in Pecans.  Chill for at least 2 hours.
When ready to bake. Preheat oven at 375 degrees.  Form into 1" balls and roll in  sugar.  Bake for 10 to 12 minutes on an ungreased cookie sheet.
Remove from pan immediately.
