Trinculo's Cafe has won the award! Please allow me to introduce myself, I have no wealth but heaps of taste. . . Of course, the word taste is open to interpretation. I can assure you, however, that if your heart rate accelerates in anticipation of shredded potatoes woven into baskets and filled with paté, stop reading immediately and go buy a copy of Martha Stewart Living. While we might make the occasional foray into uncharacteristic and unsustainable food frippery, this space is dedicated to accessible gastronomic adventures, including recipes, restaurant reviews and more. Still here? Great - get out your custard cups and let's begin with a dessert as easy as it is comforting. The beauty part is that you can tart this recipe up or keep it casual.
HOMEMADE PUDDING In a microwaveable mixing bowl, stir together until smooth: 3 TBSP. corn starch 1/3 cup granulated sugar Mix well. Now comes the fun. Add whatever flavoring(s) and adornments you like! For a basic delicious pudding, 2 tablespoons of real vanilla will do it. Of course, the pudding won't be yellow like the stuff out of the box, but it tastes better. For lemon pudding, grate in a little fresh lemon zest and add 2 teaspoons of lemon extract. If you fondly remember the orange coconut pudding you used to be able to buy in a box, recreate it by adding 2 teaspoons of orange extract and ½ cup shredded coconut. Are you a chocaholic? No problem! Add ¼ cup unsweetened cocoa powder and increase the sugar to ½ cup. You can go on and on. Experiment. . . When you're done, Dr. Frankenstein, stir in 2 cups of whole milk, mix well, and pop the whole mess into the microwave. Cook on high for 2 minutes. Stir thoroughly. Continue to microwave, stirring every 30 seconds, until the pudding bubbles and thickens. Remove from the microwave, pour into individual dishes, cool, and voila! This works fine on the stove top, too. Pour into a pan and stir constantly over medium-high heat until mixture boils. One of my favorite adaptations of this recipe is "Who Pudding." The Grinch himself wouldn't turn up his nose at this dish - but, that's another column. . .
