Hot summer calls for coooool food, and the following dessert is a perfect ending to a summer get-together. It features an easy home-made chocolate pudding and one of our favorite fresh summer fruits, raspberries. Try this next time you want to please and impress with very little effort.

Chocolate-Raspberry Pudding Parfaits Mix well in a microwaveable bowl: 3 TBSP. corn starch 1/2 cup granulated sugar 2 TBSP. real vanilla ¼ cup unsweetened cocoa powder 2 cups whole milk Microwave mixture on high for 2 minutes. Stir thoroughly and continue to microwave for 30 seconds at a time, stirring after each increment. When pudding is thickened and bubbly, remove bowl from microwave and let cool slightly while you stir together 2 cups fresh raspberries, washed and well-dried 2 TBSP. raspberry jam 2 TBSP. sugar in a small saucepan over medium heat. Heat through, stirring, about 5 minutes, or until sugar is thoroughly melted into the mix. Remove from heat Layer into each of 4 parfait glasses: 1/8 of the pudding and 1/8 of the raspberry sauce Keep repeating layers as you fill each glass, then chill for 45 minutes. If you wish, top each parfait with lightly-toasted slivered almonds and a dollop of real whipped cream just before serving. Ahhhhh - FABULOUS!
