CRUST:
1 1/2 cups vanilla
wafer crumbs
1/4 cup butter, melted.
FILLING:
3 large eggs
2 large egg yolks
1 tablespoon gelatin,
softened
1/8 cup water
2 cans sweetened condensed
milk
1/2 cup key lime juice
INSTRUCTIONS:
Preheat oven to 350 degrees.
Crust: Mix vanilla
wafer crumbs with melted butter and press into bottom of 8-inch
springform pan. Bake
for 10 minutes or until golden brown. Set aside to cool.
Filling: Sprinkle
gelatin over water to soften. Combine 3 eggs and 2 yolks in bowl of
electric mixer. Set
over a pan of simmering water and whisk until thick and warm about
160 degrees. Then
with electric mixer on high speed whip eggs until tripled in volume
and cool. Put gelatin
in microwave for 20 seconds to melt. Reduce speed of mixer to
low and continue mixing
while adding 2 cans of sweetened condensed milk, gelatin and
1/2 cup of key lime
juice. Mix for 30 seconds or until combined.
Pour into baked crust.
Bake in preheated 350 degree oven for 15 minutes. Cool on rack,
cover and refrigerate
for 6 hour, or overnight. Run small thin knife around edge of pan,
then release pan sides.
Cut pie with a warm knife. (Run under hot water, wipe dry.)
Serve with whipped
cream. Very tart but very good, Pie is not green either. ENJOY! We
do. Whipped cream
with a shot of Tequila is very tasty on top of each piece.
