INGREDIENTS:
SYRUP
1 1/2 cups strong
coffee or espresso
2 tablespoons Kahlua
liqueur
2 tablespoons rum
PARFAIT
2 cups heavy cream
3 cups mascarpone
cheese
12 large egg yolks
3/4 cups granulated
sugar
1/4 cup light corn
syrup
1/2 cup water
2 tablespoons coffee
extract
unsweetened Dutch-processed
cocoa powder for dusting
INSTRUCTIONS:
SYRUP
Pour the coffee or
espresso into a small bowl to cool. Once the coffee is cool, add the
Kahlua and rum, and
stir well to combine. Cover bowl with plastic wrap until you are
ready to use.
PARFAIT
Place heavy cream
in medium mixing bowl and whip to soft peaks. In another bowl mix
the mascarpone on
low speed for a minute or two. Fold in the whipped cream in two
additions until well
combined. Store the mixture in the refrigerator until ready to use.
Place the egg yolks
in a medium mixing bowl and whip with and electric mixer until
thick and light in
color, about 5-7 minutes. Keep whipping while you cook the sugar.
Place the sugar, corn
syrup, and the water in a saucepan over medium high heat. Cook
sugar mixture until
the soft ball stage, 250 degrees F on a candy thermometer. Pour the
hot sugar down the
side of the bowl as you continue whipping the yolks. Whip the egg
sugar mixture until
the outside of the bowl is warm not hot 3-5 minutes.
Remove the whipped
cream mixture from the reefer and make the parfait by folding the
egg sugar mixture
into the whipped cream until completely incorporated. Pour about
one third of the parfait
into a small bowl and fold in the coffee extract. Set both bowls
aside.
TO ASSEMBLE
I like to serve Tiramisu
in dessert cups. Use a round cutter to cut disks of cake slightly
small than the cup.
The cake should be no more than 1/2 inch thick. Fill the cup about
1/4 full with the
unflavored parfait. Top with a cake disk and soak with the coffee syrup.
Fill about 1/2 with
the coffee parfait, then top each with a second biscuit disk and soak
again with the coffee
syrup. Finally, fill to the top with the unflavored parfait. Store in
the refrigerator,
covered with plastic wrap until ready to serve.
Just before serving,
remove the plastic wrap and lightly sprinkle the top with the cocoa
powder.
