250 g Flour
100 g Ham cut in pieces 125 g Butter cut in pieces + 1 tbsp 1 cup salted Water 150 g Crème Fraîche 2 Eggs 1 bag of 50 g Morels Salt Pepper Nutmeg |
Soak morels for 1 hour in cold water. Rince many times and drain. Work the flour and the butter with the tips of fingers. Wet with the salted water. Form a ball and let it rest for 30 minutes. Fry a little the morels with the butter. In a bowl break the eggs, mix with cream, salt, pepper, and nutmeg. Roll the dough and put it in a buttered and floured tart pan. Prick the base with a fork, spread the ham pieces, the morels, and then the egg-cream mixture. Cook in a preheated moderate oven for 30 minutes. Serve hot. |
