Chapon Farci Roti
Roast Chicken w/ Stuffing {French}
1 whole chicken
Olive Oil
1 loaf of french Bread
1 head of garlic, peeled and slightly crushed
Rinse chicken and dry
Rub inside and out with 1-2 tbsp olive oil
Season with salt and pepper
Set aside
Cut bread into think slices.
Take 4 pieces and rub each with a clove of garlic, throw away garlic
Brush with olive oil...Stuff into chicken
Place chicken, Breast side down, on baking rack
In a Roasting pan put remaining slices of bread
Brush each slice with olive oil and sprinkle with remaining garlic
place under the bird
This is where it gets tricky...
Bake at 400 for 40 minutes.
Turn chicken and roast until skins turns crisp and brown.
After 15 minutes of baking add 2 cups water to the bread.
Keep an eye on the bread so it don't burn.
