This is a famous cookie from the Highlands of Scotland. The highlands
are also home to the deer, haggis, and the hardy
Scot. Bonnie Prince Charles made Inverness his Army headquarters. We, in
the United Kingdom, call cookies
"biscuits". Those hot biscuits you have with your dinner in America we
would call 'rolls'. Caster sugar is just a little
finer than the sugar you put in coffee. Plain flour is the sort which
contains no rising agent. Demerara Sugar is brown
sugar (soft). Cup sizes are American.
Ingredients:
1/2 cup Margarine
1/4 cup Caster sugar
1/4 cup Semolina
1 1/4 cup Plain flour
Demerara sugar
Preparation:
• Cream the sugar and margarine together, then add the semolina and flour.
• Knead until smooth and roll into sausage shape in the demerara sugar,
coating evenly.
• Cut into slices and lay on a greased and floured baking tray.
• Bake in a preheated oven (350º F) for about 30 minutes.
• Leave on a wire rack to cool.
