Pastitsio {Greek}
Meat Mixture
6 tbsp butter
1 small onion finely diced
2 cloves garlic crushed
1 pound ground beef, cooked
1 16-oz can crushed tomatoes
1/2 cup tomato sauce
1/2 cup water
1/2 tsp cinnamon
1/8 tsp cloves
pepper to taste
Heat a large skillet and add 2 tbsp butter to it.
Saute the onion and the garlic until golden.
Add remaining butter and the cooked ground beef.
Add remaining indredients and simmer for 20 minutes.
Mixture should be thick. Set aside
The Macaroni
3/4 pound Greek Macaroni or Italian Ziti
{use long, medium size..not elbo or short pasta)
1/4 cup butter
6 eggs beaten
1 cup grated parmesan cheese
Cook macaroni according to package. You will want it firm..not mushy..
Drain and rinse.
Add to the macaroni the melted butter, beaten eggs and cheese.
Put half this mixture into a greased baking pan
{large one it calls for 9x9x2 but i used larger}
Top with the meat mixture and cover with remaining pasta.
The White Sauce
6 tbsp butter
6 tbsp flour
2 cups warm milk
3 eggs, beaten
1/2 tsp nutmeg
1/2 cup grated parmesan
salt and pepper to taste
Melt butter in a saucepan.
Stir in flour and cook a moment.
Gradually add the milk, stiring constantly and
cook until thickened and smooth.
Beat the eggs in a seperate bowl and stir in 1/2 cup of sauce.
Blen and stir the egg mixture into the saucepan.
Continue to stir and cook over low heat until all is thickened.
Add remaining ingredients and mix well.
Por sauce over macaroni and bake at 350 for 25 minutes
or until the top is delicately browned.
