How to Prepare Whole Mushrooms
CARE must be taken that no sand or dirt is left in the mushrooms. Choose mushrooms that are very fresh and as white as possible. Using a sharp knife, trim them and remove all particles of dirt. Just before cooking, wash the mushrooms carefully, drain them, par them dry with a towel, and cut off the stems. Once the mushrooms are washed, it is important to cook them immediately.
If mushrooms are used often, it is wise to prepare and cook a good supply to have on hand.
1 pound mushrooms
1/4 cup water
3 tablespoons butter
1 teaspoon salt
PUT ALL the ingrédients in a saucepan and boil for 5 to 7 minutes. Transfer the mushrooms and their juice to a glass or ceramic bowl, and let cool before storing in the refrigerator.
