Zabaglione with Champagne




Dedicated to the Reverend Robert van der Hofstadt, cholar and true friend, whose royalty has been so steadfast



IN THIS zabaglione, Champagne or another fine white wine, such as Vouvray, Pouilly-Fumé, or Muscadet, is substituted for the combined Port and white wine in the recipe for SABAYON DE L'ANNIVERSAIRE. The total quantity of liquid remains the same.

To serve two :


3 tablespoons Charnpagne or other dry white wine
2 egg yolks
5 teaspoons fine granulated sugar
1/2 teaspoon finely grated grapefruit rind



THE GRAPEFRUIT rind is added to the other ingrédients at the beginning. Proceed exactly as described for Sabayon de l'Anniversaire.
