Asparagus and Mushroom Frittata - two berries

I found this on a website where I order my delivered groceries. I added a few more vegetables and sausage to it and made quite a meal out of it!

Ingredients

2 tbsp oil
1 sausage link, cut into pieces
1/4 cup onion, chopped
1/8 tsp minced garlic
1/4 cup asparagus cut into 1" pieces
1/4 cup diced mushrooms
1/2 cup hash browns
2 eggs
1 tbsp milk
1/8 tsp pepper
1 to 2 tbsp Parmesan cheese
Salsa (optional)

Cooking

  1. Heat oil in a small skillet on medium-high heat.
  2. Cook sausage link pieces, turning occassionally, until browned on all sides.
  3. Add onion, garlic, asparagus, mushrooms and hash browns; saute 5 minutes; stir occasionally.
  4. In small bowl beat eggs, milk and pepper.
  5. Add egg mixture to skillet; reduce heat to low and cover.
  6. Cook for 10 minutes or until eggs are firm.
  7. Top with cheese. Cut into wedges and serve.
  8. Serve with salsa.

Low-Fat Tips

Use olive oil and egg substitute.
