Bell Pepper Chicken

This is a chicken stir fry with bell peppers.
Ingredients
2 boneless, skinless chicken breasts, cut into bite-sized cubes
1/4 cup soy sauce
1 tbsp water
1/2 teaspoon garlic powder
1 8 oz can sliced water chestnuts, drained
1 medium green bell pepper, cut into strips
2 tsp cornstarch
2 tbsp water
1 cup sliced mushrooms
Cooking
- Heat a non-stick skillet and brown chicken on all sides.
- Pour in soy sauce, 1 tablespoon water and the garlic powder.
- Bring chicken and soy sauce mixture to boiling; reduce heat. Simmer 15 minutes.
- Stir in water chestnuts and bell pepper.
- Cover and simmer 5 to 10 minutes or until juices of chicken run clear.
- Add mushrooms.
- Mix in cornstarch and 1 tbsp water; stir until mixture thickens.
- Serve with rice or couscous.
