Country Captain Chicken - two berries

This was the first dish I ever made with curry. Now, of course, my house smells like curry all the time!

Ingredients

2 boneless chicken breast, cut into bite-sized pieces
3 tbsp flour
1 green, yellow, or red sweet bell pepper (or a little of each) sliced in strips
1/2 cup diced onion
1 can minced tomatoes with juice
2 tbsp raisins (or one of those 1.5 oz boxes)
2 tbsp brown sugar
1 tsp curry
1/8 tsp celery salt

Cooking

  1. Coat chicken in flour.
  2. Spray skillet with non-stick cooking spray and heat over medium-high heat. Brown floured chicken for 5 minutes, or until meat juices run clear.
  3. Add bell pepper and onion. Continue cooking until onion is translucent.
  4. Add tomatoes, raisins, brown sugar, curry and celery salt. Mix thoroughly.
  5. Cover and simmer for another 5 minues.
  6. Serve with basmati rice.
