Chicken Fried Rice

I love Chinese, but it's too expensive to go out. I bought some seasoning packets to make stir fries and fried rice, and this recipe was on them.
Ingredients
1/3 cup cooked chicken, cubed
1 1/2 cups cooked rice
onion OR green onion
1/3 to 1/2 packet of fried rice seasoning
1 tsp soy sauce
1 egg
1/2 cup peas and carrots
Cooking
- If you don't have leftover rice, prepare it first according to your rice's directions.
- Spray large skillet or wok with non-stick baking spray.
- Add chicken, rice, onion. Stir until chicken and rice are fully re-heated.
- Add the fried rice seasoning and soy sauce. Stir in well to fully coat the rice and cook for one minute. Push aside.
- Scramble egg in skillet or wok until fully cooked.
- Mix everything together -- rice, eggs, and meat -- add peas and carrots.
- Heat for about a minute and serve.
I generally use leftover rice from previous meals or even rice left over from Chinese take out! This recipe is enough for one and can be doubled.
