Chicken and Rice Dinner

Chicken and rice are a mainstay for quick and easy meals in the midwest. Serve this with hot bread, and it makes a very filling dinner.
Ingredients
1 cup rice
2 chicken breasts, cut in strips
1 can cream of chicken soup
2 tbsp sherry (optional)
1 cup milk
1 package dry onion soup mix
Cooking
- Grease or spray bottom of casserole dish.
- Put rice on bottom of casserole dish.
- Arrange chicken pieces on top of rice.
- Mix cream of chicken soup with the sherry and milk. Pour over chicken.
- Sprinkle dry onion mix over dish.
- Cover casserole dish and bake 1 1/2 to 2 hours at 350 degrees.
For a different taste, try cream of celery soup or cream of mushroom soup instead of cream of chicken.

Use reduced-fat creamed soup. Use low-fat milk (1% or skim).
