Chicken and Rice Dinner - two berries

Chicken and rice are a mainstay for quick and easy meals in the midwest. Serve this with hot bread, and it makes a very filling dinner.

Ingredients

1 cup rice
2 chicken breasts, cut in strips
1 can cream of chicken soup
2 tbsp sherry (optional)
1 cup milk
1 package dry onion soup mix

Cooking

  1. Grease or spray bottom of casserole dish.
  2. Put rice on bottom of casserole dish.
  3. Arrange chicken pieces on top of rice.
  4. Mix cream of chicken soup with the sherry and milk. Pour over chicken.
  5. Sprinkle dry onion mix over dish.
  6. Cover casserole dish and bake 1 1/2 to 2 hours at 350 degrees.

Tips

For a different taste, try cream of celery soup or cream of mushroom soup instead of cream of chicken.
