Cheesy Chicken and Pasta - three berries

One week, frozen chicken breasts were on sale at my local grocery store. The next week, pasta went on sale. What a great combo!

Ingredients

1 cup leftover cooked chicken
1 to 1 1/2 cups uncooked pasta
1 can cream of chicken soup
1/2 cup milk
1 cup shredded cheddar cheese
1/2 tsp basil
1/4 tsp oregano
1/8 tsp thyme

Cooking

  1. Preheat oven to 350 degrees.
  2. Cube chicken and put into a casserole dish.
  3. Add pasta, milk, cream of chicken soup, cheese and spices. Mix well.
  4. Cook at 350 degrees for 50 minutes.

Tips

Try different kinds of pasta for variety. Elbow macaroni works for this recipe, but so does rotini, shells, and gemelli pastas.

If you did not have leftover chicken, save the broth from boiling chicken breasts. Simply strain out the fat and keep the broth in the refrigerator until you are ready to use it in another recipe. It can also be frozen if you do not plan to use the broth within the week.
