Ham, Cheese & Vegetable Bake - three berries

I was looking for a way to use up leftover ham when I looked on the back of a Bisquick box.

Ingredients

HAM AND CHEESE MIX
------------------
1 cup cooked ham
1 cup mixed vegetables
1/4 cup grated parmesan cheese
salt
pepper

BISQUICK MIX
------------
1 cup Bisquick
1 cup milk
2 eggs

TOPPING
-------
1 cup shredded cheddar cheese

Cooking

  1. Preheat oven to 400 degrees.
  2. Prepare vegetables if using fresh.
  3. Grease 9" pie plate with shortening or non-stick cooking spray.
  4. In a large mixing bowl, mix ham, vegetables and parmesan cheese until coated well. Pour mixture into prepared pie plate. Season with salt and pepper.
  5. In small mixing bowl, stir together Bisquick, milk and eggs.
  6. Pour the Bisquick mix evenly over ham mixture in pie plate.
  7. Bake 25 minutes at 400 degrees or until toothpick or fork comes out clean.
  8. Sprinkle the shredded cheese on top of pie.
  9. Bake two minutes longer or until cheese is melted.

Tips

If using fresh vegetables instead of frozen, cook them in a small saucepan. Suggested vegetables are carrots, corn, peas, and potatoes. Use very minimal water, and make sure not to overcook them. Vegetables work better if they are slightly firm, but not mushy.

The best way to test if Bisquick is baked all the way through is to stick a toothpick or fork down the top center. If it comes out "clean" (no moist dough sticking to the toothpick or fork), it is done.

An easy way of cubing is to cut into the meat first before slicing it. Cut lengthways into the flat side and then again at a right angle so that when you actually slice the meat, it is already cubed!

Put a cookie sheet under the pie plate so the batter doesn't drip inside your oven.

Low-Fat Tips

Use reduced-fat Bisquick and low-fat milk (1% or skim). Use either egg whites or egg substitute. Use reduced-fat cheese. Turkey ham is lower in fat than regular ham.
