Italian Chicken and Rice Casserole

I created this recipe when I wanted to cook rice and chicken together with the taste of tomato.
Ingredients
1 cup chicken breast, cubed
1/2 cup rice
1 8 oz can tomato sauce
1 cup chicken broth
1 tsp salt
1 tsp pepper
2 tsp Italian seasoning
1/2 tsp minced garlic
mozzarella cheese
Cooking
- Preheat oven to 350 degrees.
- In a small bowl, mix together rice, tomato sauce, salt, pepper, Italian seasoning and minced garlic.
- Grease a casserole dish and pour in rice mixture.
- Add chicken broth and cubed chicken.
- Bake covered for 35-45 minutes at 350 degrees.
- Uncover casserole and sprinkle on mozzarella cheese. Cook for 5 minutes or until cheese is melted.
Use left over chicken broth from previously cooking a chicken instead of using canned broth.

Use low-fat cheese and de-fatted chicken broth if you buy canned broth.
