Italian Chicken and Rice Casserole - two berries

I created this recipe when I wanted to cook rice and chicken together with the taste of tomato.

Ingredients

1 cup chicken breast, cubed
1/2 cup rice
1 8 oz can tomato sauce
1 cup chicken broth
1 tsp salt
1 tsp pepper
2 tsp Italian seasoning
1/2 tsp minced garlic
mozzarella cheese

Cooking

  1. Preheat oven to 350 degrees.
  2. In a small bowl, mix together rice, tomato sauce, salt, pepper, Italian seasoning and minced garlic.
  3. Grease a casserole dish and pour in rice mixture.
  4. Add chicken broth and cubed chicken.
  5. Bake covered for 35-45 minutes at 350 degrees.
  6. Uncover casserole and sprinkle on mozzarella cheese. Cook for 5 minutes or until cheese is melted.

Tips

Use left over chicken broth from previously cooking a chicken instead of using canned broth.
