Pork Chops Italian (Mini Porkettas) - one berry

My mother bought a porketta for the holidays once, and since then I've been looking to find the exact same recipe. This isn't exactly like it, but since I love parsley, this works for me, too.

Ingredients

4 boneless pork loin chops, trimmed of fat
1/4 cup chopped fresh parsley
1 tsp dried oregano leaves
1 tsp fennel seed
1 tsp paprika
1/2 tsp garlic salt
1/2 tsp pepper

Cooking

  1. Preheat oven to 350 degrees.
  2. In small bowl, combine parsley, oregano, fennel, garlic salt and pepper; mix well.
  3. Rub pork chops with parsley mixture; place in a baking dish sprayed with non-stick vegetable oil.
  4. Bake at 350 for 30 to 40 minutes or until pork chops are no longer pink in center.
