Seasoned Orzo and Black Beans - two berries

Here's something low-fat that can be a main vegetarian dish or a wonderfully different side-dish.

Ingredients

2 cups water
1/4 cup and 2 tablespoons uncooked orzo pasta
1/2 cup frozen broccoli
1/2 cup cooked black beans, rinsed and drained
1 tablespoon butter or margarine
1/8 teaspoon dried tarragon
1/8 teaspoon dried thyme
salt to taste
ground black pepper to taste

Cooking

  1. In a saucepan, combine water and pasta. Cook over medium high heat until mixture comes to a full boil, 4 to 6 minutes.
  2. Continue cooking, stirring occasionally, until pasta is tender, 8 to 10 minutes.
  3. Stir in frozen broccoli, cover, and reduce heat to medium low. Cook until vegetables are tender crisp, 2 to 4 minutes. Do not overcook.
  4. Drain and stir in beans, butter or margarine, tarragon, and thyme.
  5. Continue cooking until heated through.
  6. Season to taste with salt and pepper.
