Pinto Beans and Corn |
I was looking for a way to make tacos with just beans rather than meat. This makes a great vegetarian dish or side dish.
1 can pinto beans, drained and rinsed 1 4 oz can diced mild green chili peppers 1/2 cup frozen corn, thawed or 1 small can nibblet corn, drained and rinsed 1 large tomato, diced or 1/2 can diced tomato 1 teaspoon cumin 1 sliced jalapeno (optional)
