Pierogies Stroganoff - two berries

Pierogies are little potato-stuff pastas (pierogie means "little pie"). I had bought pierogies in order to try them out, and although I enjoy the traditional way of making them by pan-frying them with butter and onions, I wanted to eat them in a creamy sauce. I came up with this.

Ingredients

2 tbsp butter
8 pierogies
1/2 cup chopped onion
1/2 lbs hamburger
1 can condensed cream of mushroom soup
1/2 cup chopped fresh mushrooms
1 tbsp paprika
1/4 cup sour cream OR plain yogurt
2 tbsp parsley

Cooking

  1. Boil pierogies according to package directions.
  2. Cook hamburger in a skillet until no longer pink. Drain off fat, and season with salt and pepper. Place aside.
  3. Spray a skillet with non-stick cooking spray and pan-fry the pierogies with onion.
  4. Add cream of mushroom soup, mushrooms, paprika and cooked hamburger meat. Mix together in skillet.
  5. Heat through for about 5-10 minutes, stirring occasionally.
  6. Remove from heat. Stir in sour cream or yogurt. Sprinkle with parsley and serve.
