Easy Pot Roast

I had a friend staying with me while she was looking for a new job. Instead of paying rent, she bought the groceries and washed the dishes. One day she brought home a pot roast, and I honestly had never made one before. I thought it was supposed to be time-consuming. I found out it wasn't, and this is the best hands-off full meal recipes I've ever made.
Ingredients
roast beef
potatoes
carrots
onion
salt
pepper
Cooking
- Prepare potatoes and carrots. For a really easy no-work recipe, use new potatoes (scrub well) and baby carrots.
- Put meat into a casserole dish or crock pot, and put the vegetables around the meat, but not covering it.
- Add cold water, but only enough to cover only half-way up the vegetables. You might want to actually use LESS than that if you are using a crockpot.
- Cut some onion to place on top of the meat. Season meat with salt and pepper.
- Cover and cook.
- Casserole Dish: 1 1/2 - 2 1/2 hours at 300 degrees.
- Crockpot: 5-6 hours on high heat or 7-8 hours on low heat.
The trick to making a roast nice and juicy is to keep enough moisture in it. So long as you keep the roast covered, the moisture will stay inside, and it will create its own juices. However, don't overcook the meat or it will become too tough.
