Shepherd's Pie

This is a variation on many shepherd's pie recipes I've found. The Worcestershire sauce gives it a little zing.
Ingredients
2 tbsp butter
1 large onion, chopped
1 stalk celery, chopped
1 1/4 lbs ground beef
1 garlic clove, minced
2 tbsp flour
1 cup beef broth
1 cup canned diced tomatoes
1 tsp dried thyme
1/2 tsp dried rosemary
1 1/2 cups corn kernels
1 1/2 tsp Worcestershire sauce
salt and pepper to taste
prepared mashed potatoes
1 cup grated white cheddar cheese
paprika
Cooking
- Preheat oven to 400 degrees.
- Melt butter in large skillet over medium heat.
- Saute onion and celery until onion is translucent.
- Add ground beef and cook until meat is no longer pink. Drain fat.
- Return skillet to burner and set heat to medium-low.
- Stir in garlic and flour, then add broth, canned tomatoes, herbs, corn and Worcestershire sauce. Add salt and pepper to taste.
- Gently simmer mixture for 5 minutes, partially covered.
- Spray casserole dish with a non-stick spray and put in filling mixture.
- Spoon mashed potatoes over filling. Sprinkle cheese and paprika on top.
- Bake uncovered in center of oven for 20 minutes, until top is golden brown.
You can quickly prepare mashed potatoes from instant or frozen varieties which can be quickly whipped up in the microwave.
