Sweet & Sour Chicken - three berries

I love Chinese, but it's too expensive to go out. And who doesn't like sweet & sour chicken?

Ingredients

up to 4 chicken breasts cut into 1/2" cubes
vegetable oil

SWEET & SOUR SAUCE
------------------
2 tbsp brown sugar
1 tsp cornstarch
2 tbsp cider vinegar
1/3 cup pineapple chunks with juice OR pineapple juice
1 tbsp catsup

FRY BATTER
----------
DRY
---
1/4 cup cornstarch
1/4 cup flour
1/2 tsp salt
1 tsp baking powder

MOIST
-----
1/4 cup milk
1 egg

Cooking

  1. Pour vegetable oil in to a deep fryer or electric skillet. Fill up to 3" worth of oil in the fryer, or as much as you can into the skillet. Heat oil to 350 degrees.
  2. In a small saucepan, combine all ingredients for the sweet and sour sauce. Stir constantly over medium heat until sauce thickens and gets to a rolling boil. Turn down heat.
  3. Combine the dry ingredients of the batter in a bowl.
  4. In a separate bowl, beat egg lightly in the milk.
  5. Stir egg and milk into the batter's dry ingredients.
  6. Dip chicken into batter.
  7. Fry chicken in the deep fryer or electric skillet.
  8. Turn the chicken approximately 3 minutes into frying, or when that side has turned a golden brown. Continue frying other side until it, too, has turned golden brown.
  9. Let chicken drain on paper towels.
  10. Serve with sauce.

Tips

Using the electric skillet to fry the chicken, you will probably only be able to fry a few chicken peices at a time, and you will notice that the oil soaks up fast into the batter, leaving you less to fry the next batch. To effectively fry in an electric skillet, do not fry more than five pieces of chicken at once, and if it's time to refill the skillet with more oil, finish cooking what chicken you have in there before pouring new oil in. Let the oil fully heat up to 350 degrees again before frying more or you'll end up with really oily chicken.
