Turkish Lamb Kebabs - three berries

I found this in a Middle Eastern cookbook, and now it's one of my favorite grilling recipes.

Ingredients

MARINADE
--------
2 cloves garlic, crushed
1 tbsp extra-virgin olive oil
4 tbsp no-salt-added tomato sauce
1/8 tsp paprika
1/8 tsp ground allspice
1/8 tsp ground cinnamon
1/8 tsp ground cumin
1/2 tbsp fresh thyme leaves OR 1/8 teaspoon dried thyme leaves
black pepper to taste

1/2 lb lamb from leg, skinned, trimmed of visible fat, and cut into 1 inch cubes
cherry tomatoes

Cooking

  1. Put all the marinade ingredients in a small bowl that can be covered (preferably NOT metal) and mix well.
  2. Add meat and stir well until meat is completely coated in marinade.
  3. Let marinate for at least 2 hours in refrigerator.
  4. Heat up grill or turn on oven to broil.
  5. Thread meat and cherry tomatoes onto skewers.
  6. Grill or broil for 3-5 minutes on each side, or until meat and tomatoes are done to your liking.

Tips

I prefer to let marinade sit overnight.

Other vegetables suitable for grilling are onion, bell peppers, and mushrooms in addition to the cherry tomatoes.

When grilling, be sure to soak your skewers for at least an hour if using wood, or if using metal, spray with non-stick vegetable oil before threading ingredients.
