Turkish Lamb Kebabs |
I found this in a Middle Eastern cookbook, and now it's one of my favorite grilling recipes.
MARINADE -------- 2 cloves garlic, crushed 1 tbsp extra-virgin olive oil 4 tbsp no-salt-added tomato sauce 1/8 tsp paprika 1/8 tsp ground allspice 1/8 tsp ground cinnamon 1/8 tsp ground cumin 1/2 tbsp fresh thyme leaves OR 1/8 teaspoon dried thyme leaves black pepper to taste 1/2 lb lamb from leg, skinned, trimmed of visible fat, and cut into 1 inch cubes cherry tomatoes
Other vegetables suitable for grilling are onion, bell peppers, and mushrooms in addition to the cherry tomatoes.
When grilling, be sure to soak your skewers for at least an hour if using wood, or if using metal, spray with non-stick vegetable oil before threading ingredients.
