Southwestern Turkey Stew - two berries

Ingredients

2 tbsp flour
1/8 tsp salt
1/8 tsp black pepper
2 turkey breasts, cut into 1/2 inch cubes
1 can diced no salt added tomatoes
1 can black beans, drained and rinsed
1 can low-fat, low sodium chicken broth
2 cups frozen corn
1 cup onion, chopped or 2 tbsp dried diced onion
1 4 oz can diced mild green chili peppers
2 tsp minced garlic
1 1/2 tsp ground cumin
1 1/2 tsp dried oregano, crushed
fresh cilantro, chopped

Cooking

  1. Combine flour, salt and pepper in a gallon-sized plastic bag. Add turkey a few pieces at a time and shake to coat.
  2. In a large saucepan, combine coated turkey with remaining ingredients except cilantro. Place over high heat and bring to a boil.
  3. Reduce heat, cover, and simmer for 25 minutes or until turkey is done, stirring occasionally.
  4. Serve with cilantro sprinkled generously on top.
