Turtle Cookies

Someone brought these cookies to a work Christmas party. They are easy to make and taste like little cakes.
Ingredients
1/2 cup butter
6 tbsp cocoa
2 eggs
3/4 cup sugar
1 cup flour
1 tsp vanilla

- Preheat a waffle iron to medium heat.
- In a saucepan melt butter and cocoa over low heat. Remove from heat as soon as butter has melted.
- In a bowl, mix together eggs, sugar, flour and vanilla.
- Add the cocoa to the batter and mix thoroughly.
- Drop a tablespoon of batter on the waffle iron. If you have a large waffle iron, you can do two at a time, but be sure each tablespoon of batter is far enough away from the other so they do not spread together.
- Close waffle iron and cook for one minute.
- Remove cookie from waffle iron to cool. Continue steps five and six until all the batter is used up.
- Once cooled, frost cookies with your favorite frosting.
Use low-fat margarine and either egg whites or egg substitute for the eggs.
