Singapore is an island situated at the shipping crossroads between the East and the West. It is also a cosmopolitan city where people from the world over do business. The country is a multi-cultural one, the main races being the Chinese, the Malays and the Indians.
The food here reflects this. In addition to local cuisines, there are many restaurants and cafes that serve Mexican, Spanish, Italian, Mongolian, Thai, Japanese, Arabic, Cajun and other cooking styles from around the world.
Local cuisines are Chinese, Malay and Indian cuisines. There is an interesting cuisine called "Nyonya cooking". The Nyonyas are ethnically Chinese who came to this part of the world many years ago, during the Ming and Ching dynasties of China. As they have been living here for so many years, they have evolved a distinct sub-culture with its own distinct cuisine which is a unique blend of Chinese and Malay cooking.
There are other examples of such "blending" of cuisines: "Halal" (or Muslim permissible) Chinese cooking and Eurasian cooking which is a blend of Portugese/Malay cooking to name but two.
A place where you can have a sampling of local Singapore cuisine is @emoh cafe. They do not have an official website so I have done an unofficial site for them. I have "borrowed" pages from their menu. I might consider returning it because I've noticed in their latest menu a plea not to steal them.
