Jennifer’s Sauerkraut Meatballs

Ingredients:

1 pound ground beef

1 pound package Jimmy Dean brand sausage

16 oz can corned beef

16 oz can or jar of sauerkraut, drained

2 Tablespoons flour, or more as needed

3 eggs, beaten

Seasoned breadcrumbs

Vegetable oil for frying

Brown each of the meats separately, draining well. Mix the three meats well, and return to the pan. Add the sauerkraut and stir well to combine. Slowly stir in just enough of the flour until the mixture thickens and has a nice texture. Allow the mixture to cool enough to handle in a large bowl.

Form the mixture into meatballs. If the meatballs break up and generally don’t hold together well, more flour may be added to the mixture.

Gently roll each meatball in the beaten eggs, and roll in a pan of the breadcrumbs to coat. When the meatballs are all prepared, fry in hot oil until golden brown. A deep fryer works well for this. Drain and enjoy!
